To begin this delicious recipe, you will first want to preheat your oven to 350 degrees Fahrenheit, or 175 degrees Celsius. Next take out a large pot, fill it with water, then set it on your stove over medium high heat. While you are waiting for your water to boil, thoroughly wash and rinse your yams under cool running tap water. Next take out a standard potato peeler, and remove the outer skin from the yams. By this time your water should be boiling, so add in your yams, and let them boil for roughly twenty minutes, or until they are soft and tender. Once your yams have been cooked, drain the water from the pot, strain your yams, and then set them aside. Moving forward, next take out a large mixing bowl, then add in the orange juice, light corn syrup, vanilla extract, cinnamon, nutmeg, and lemon peel. Using a metal whisk, whip these ingredients together until you have a smooth and even mixture. Next take out a second small mixing bowl, and then whisk together the brown sugar, white sugar, and all purpose flour. Lastly take out a baking dish and add in the yams.
