Preparation Instructions:
To begin this recipe, you will first need to thoroughly wash and rinse all of your potatoes under cool running tap water. Next take out a standard potato peeler, and remove all of the outer potato skin. Next take out a large cooking pot, fill it with water, and set it on the stove over medium high heat. When your water reaches a rolling boil, add in your whole potatoes. If your potatoes are large, you may want to cut each one in half before boiling. Cook your potatoes for twenty minutes, or until they are tender when poked with a fork. While your potatoes are boiling, take out your blender and plug it in. Add into the blender the olive oil, garlic cloves, lemon juice, salt, and ground black pepper. Blend these ingredients together until you have a nice pureed dressing. Place the finished dressing into a small bowl. Once your potatoes are done cooking, drain out all of the water, and serve them hot. Pour the garlic and olive oil dressing over them, then garnish each with the chopped fresh parsley. These potatoes can be served as a side dish, or as a light meal.
